Parmesean Pea Rissoto is full of flavor from green onion, lemon juice, garlic, parmesan cheese, and rich chicken stock, with sweet peas sprinkled throughout. The perfect dish for any special occasion, holiday, or date night.


  • 1 tablespoon olive oil
  • 2 cups arborio rice
  • 1/2 cup white wine
  • 4 cups chicken stock
  • 1 cup peas
  • 1 tablespoon green onion chopped
  • 2 tablespoons fresh squeezed lemon juice
  • 1/2 cup grated parmesan cheese
  • salt and pepper to taste

Cooking Directions

  1. In a deep sauté pan toast the rice in oil until golden over medium low heat.
  2. Add wine and 1 cup stock, stirring consistently.
  3. Once liquid is absorbed add another 1 cup stock and stir.
  4. Repeat step 3 until all stock is used, then add green onion, lemon juice, and peas. Stir to combine.
  5. Finish with parmesan and plate. Risotto will be creamy and thick.
